munich helles with omega bayern lager yeast

This is a grain bill I've used before that I thought worked pretty well.  10 gal recipe.

 

15 lbs Pilsen

2 lbs Munich

1 lbs carapils

 

mash at 150F

 

Now normally I've actually hit this pretty hard with with hallertau throughout the boil but I don't think this is typical.

 

I was going to shoot for about 25 IBUs with only a very small hop addition at flame out.

 

I was thinking of using Mt. Hood for the bittering addition and maybe even a 1oz addition at 0 mins.  Crazy?  My other option is US hallertau but it almost seems too intense for a Helles.

Not crazy. I say make it. I like Helles less hoppy than that is likely to come out but if that’s what youre going for brew away.

Nah, go with whatever you like. If you think the Mt. Hood late is what you want then go for it. I tend to like Pils quite hoppy and Helles malty but thats just a me thing.

if you were planning on sending them anyway that would be great.  not sure what the typical transit time is.  I was thinking of brewing possibly next weekend.

Mt. Hood is wonderful in this type of lager. I used it exclusively for a "light" lager I put together for a fishing trip. You're spot on with lighter bitterness too (imho).
