Fun stuff....
I like 1056 better than US-05 but don't pick up stuff others do from 05. That's one of reasons I quit judging. I could score within reason with others judging the same beer with me but I was terrible. Well not great, at descriptions and suggestions. I guess my palate is not that great or not trained that well. Honestly, I think years of smoking left me damaged for rating beer. I think I'm still mess up on that over 5 years out.
Still, fun propping up a little dry yeast.
