I'm getting tired of buckets - especially since two buckets don't really fit in my ferm freezer.  I'm getting tired of siphoning beer and would love to get back to pushing it from fermenter to serving keg.

I've got a keg that used to hold Spaaten that's been kicking around for years.  I think it's 50 Liter, but might be 1/2 barrel, but either way should work for fermenting 10 gallons.  It has the sliding connection, which I do own the tap for.

What would be the logistics involved with using this as a fermenter?

I assume it would have to be CIP as I would never want to open it.  I have a pump for that solution, but would have to rig the setup to use the connector with the keg upside down, yes?  Then sanitize unseen as well.

Getting the wort in would again be via the connector.  Actual fermentation would be easy using a blowoff tube from that same connection.  (I'm envisioning using QD's on the connection to plumb all the different ins and outs.)  Then use CO2 to push the beer into the serving keg.

Do you think I should open it just once to cut the diptube a bit?

Am I missing anything?
