I put this "Marzen" on tap this past week. I sampled it and thought it was kind of boring. Pilsner, Munich 2, some Carafa, etc., Magnum to bitter and Tettnanger later in the boil, S-189. I tried a little more the next night and thought the same thing... just kind of boring. I considered adding some dry hops to the keg or something to wake it up. Fast forward to last night when my sister and BIL stopped by (they were in Chicago for a funeral service). That beer was the one that got hit the hardest. Everyone was drinking it and commenting on how good it was. Today my wife is drinking it again and she's had 3 pints already. Strange.

I believe there must be a term for this..We homebrewers tend to be our worst critics..Sounds like a tasty brew.

I went back and checked my notes and see that I used some Rahr Premium Pils along with some Dingemans Pils. I have been using Barke and Swaen which I consider both to be excellent malts. I'm not saying the Rahr and Dingemans aren't good but I don't think they're giving me the same full character I'm used to.

My sole S-189 beer is a bit dry/flat (?) too but it's a single data point and I mashed low and long. I reused some slurry in a schwarzbier but haven't tasted it yet.

Chils mentioned that he likes it in more malty styles. Maybe it's a high attenuator and dries the beer out a bit so if you use it in something hoppier or a beer with more sulfate in it, it just accentuates that bite.
