Beer church this morning.

I just mashed in a nice ordinary bitter and if the beer gods cooperate I will have it in the fermenter and all cleaning done by kickoff. Now please turn in your hymnals to "He turned water into wine".

And The Lord He creatith water and it was good. And water begot grains and hops and it was good. And through His infinite wisdom yeast was born. And man thanked God and created beer from the bounty God had provided. Amen. :)

Amen to that. What yeast are you using for it? I went to my LHBS yesterday and picked up the 2487 Hella-bock to make a Vienna next week & I also picked up a Staro-Prague Lager Activator. Making my Holiday-Schmoliday Christmas beer tomorrow with 1099 Whitbread, in accordance with the scriptures. It is indeed right and salutary that we should make these divine liquids. :)

Amen Brother! I also have a roast beef cooking for roast beef po boys during the game. Life is good.

WLP 833, German Bock Lager. I've used it before in other lagers, and really like it.

Ken,If you use the Sparo strain soon I will be interested to hear your feedback on this yeast. I have a recipe for a Bo Pils that I was going to ferment with 2278 but once I get to the LHBS and pick up the sparo I am going to give that a try instead. I don't know much about this strain so feedback will be good. I will probably brew mine in the next month or so. Cheers.

NC: I will be happy to update you with the results on this yeast. I'm a sucker for any lager yeast like this and I enjoy making Czech Lagers with 2278, 2124, 2000, 2001, etc. I went to pick up the Hella-bock strain, but when I saw the Sparo strain, I had to grab it.Slainte: My original yeast for my Vienna was the 833, but I can't get White Labs locally and I had no other reason to place an online order. So I'll use the 2487 Hella-bock which I haven't used before. Since they're both bock strains, I think they'll be similar. I have used the 833 before and I agree it's very nice.I hope you all have fun with your brewdays, gang. Now, bow your heads and let us pray. May peace be with you... And also with you. :) Cheers.

I tried the prague yeast a long time ago. It flocculated hard when I crashed it, and left some diacetyl. I didn't really know what I was doing so it was likely my fault. Just bought a couple packs of Hellabock, hopefully I have time to brew my Smoked Urbock pseudo-clone soon.
