Reuben Casserole

I just finished eating this, based on a recipe from the ladies on the soap forum, but improved by me.

 

8 oz wide egg noodles, cooked

12 oz jar of sauerkraut, drained

6 oz swiss cheese, shredded

6 oz corned beef or pastrami, jullienned

2 eggs, beaten

1/2-ish bottle of 1000 Island dressing

2 slices rye bread

enough butter

My kraut had caraway already, but if yours doesn't, maybe add some if you like it.

 

Beat eggs and mix in 1000 Island together until smooth. Then add everything everything but the noodles.  It will be a little stiff.  Make rye bread into fresh crumbs (I use a coffee grinder.) and add enough melted butter to make proto-crispy topping.  Drain noodles and cool a minute or two so as not to cook the eggs right away.  Mix everything together, plop into casserole dish, cover with rye crumble and bake uncovered at 375F for half an hour, or until crumble is crispy and egg is set.

 

This was really great.

I made this tonight, good stuff! I used some left over corned beef I smoked on Sunday.
