This is a thread for the long term planners among us ;). I'm planning brewing months and sometimes approaching a year in advance.  It's usually based on what yeasts I'll be using.

 

so next up - probably in a month or so:

 

wyeast 1450

drez style chinook/citra/simcoe pale ale

stout

denny's RIPA

 

those will be made over the course of 1.5-2 months.  and then after that:

 

omega bayern (augustiner yeast)

helles

dunkel or schwarzbier (not sure which yet)

 

I'm sure after all of that I'll want to make some crazy NE style IIPA.  probably wouldn't be until spring though.

Session Pils
Helles
Dunkel
Baltic porter maybe

Monday will be a wet hop ale with my harvest this year. S-05 or 1318

I need to get a package of 1450 or 1272 for
Smokey Brown
Chinook/Citra
Milk Stout

I also have a bunch of funky yeast that I want to use in something to be ready next spring.

Looking to get some darkness back into the pipeline.

 

Dry stout - not sure if I take this one towards the Irish dry/lower-octane route, or if I (as usual) beef up the gravity.  Will get served on nitro.

 

Porter - Same as above; do I go the Sierra Nevada/Edmund Fitz (<6%) route, or something more robust?  This one will go the usual CO2 route.

BJCP has it as 4.4-5.2.  Session beer is 4.0% or less.

I did a hefe sunday night. Once that's done, ill harvest yeast and make a weizenbock. Put here 8s what i have in the pipeline:

Low abv bitter, then a english barelywine

Rauchbier, Baltic Porter, Eisbock, scottish 60, wee heavy, straight lambic, RIS with sour cherries, malt liquor,Mexican Lager, Helles, dark IPA, Apa and a NEIPA. This tear through my inventory; then do a bulk buy of grain and hops, and plan my next year or so of brewing.

I tend to plan wayyy to far in advance :)

You'll have to report back on how you like the character of the Bayern yeast. Making a helles and a dunkel is a righteous way to go... you can pretend your basement is an Augustiner Bierhall. :D

I have some 1450 going now with a porter. Plan to use that slurry and brew a nut brown ale. After that not sure, but will probably keep that yeast going.

I have a bunch of new stuff to test this weekend, so I'm hoping to get in a brew.  Using Eureka malt from Gold Rush, Genesis fermenter, and cryo pellets and powder.

If I can pull off 10 gallons split batch next week, I'll build off of each cake; Belle Saison and 34/70. With that, likely another Saison variation and Doppelbock or Stout. I also have a pack of Budvar I must use soon.
