appears I may have a stuck mead. OG was 1.110 2 weeks later it is barely kicking at 1.070 I should keep waiting? or add some of them magic sauce minerals, or maybe pitch another yeast pack?

Another yeast pack, and some yeast nutrient would be good.  Did you add any yeast nutrient at the beginning of the primary?

 

I ask as honey tends to be pretty low in the nutrients yeast need, so if you didn't add any at the beginning, i'd add some more with some more yeast.

So it's dropped to 30 points since the second pitch.

Next question it has an awesome sweetness I'd love to keep but at 1040 it's a bit too high right? Should I let it drop to 1.020 then throw some potassium Metabo sulfate in it?

1.040 isn't necessarily too high, but that's a call you have to make.  If you like how it tastes now, you could hit it with metabisulfite and stop fermentation.

 

Are you planning on serving it on draft, or bottling?  and if bottling, are you looking for it be a sparkling, petillant, or still mead?

I for sure want it still mead and bottled. I'll let it hit 1.030 then put in the metabisulfate
