I know that a lot of Scottish ales are fermented at lower ale temps, so i figured that 05 is a monster and could handle a low temp. Has anyone ever lagered with S-05 successfully and to full attenuation? I have it at 54 degrees right now, and I used some yeast hulls when I rehydrated. edit: It is bubbling the airlock and I had a 24 hr lag time.

I've never done it, but I think it would be fine at that temp. I have used liquid yeasts like White Labs 01 and Wyeast 1028 in the high 50s and they were just fine at those temps and they produced a very smooth beer. US-05 is a high attenuater (in my experience) so I would think it would finish up. Maybe raise the temp towards the end of primary and gently swirl it to get the yeast back in suspension. That should be one smoooooooooth Scottish ale.

I've had S-05 continue to work in the kegerator at 40F. It was a beer that I rushed into the keg (after about 4 days IIRC) because I was almost out of beer. At first it made a bunch of diacetyl, but it cleaned that up after a couple of weeks.
