hoppy wheat beers - any problems?

I have used some that is 6+ years old with no real issues.  I tasted it before I used it though.

 

always this.  I also will taste a new grain if I've never used it before.  I tasted some of the optic before I dumped it in the bucket.  I think drez is right that it's going to not be much diff than 2-row.  kind of disappointing that it wasn't something more since it's all "old timey UK floor malted heirloom artisinal barley".  maybe it will end up being something more?  I guess I'll find out.

got the mash going at 8:00.  I'll let it mash this morning and finish this thing this afternoon after my son's soccer game.

Doing a deep cleaning right now but may try and pull off this blonde latter today. I would like to get a lager going but no yeast ready.

fermentation is almost done.  I had to plug in the space heater to keep it at 70F (21C) this morning!

I would have to do the same.  My basement is mid 60's right now.

Gravity is 1.008. Still a little foamy in the hydro sample which usually means there is still some activity but I bet this is pretty much it. Taste was reasonably good for warm and full of yeast. Hops seem really good. Right now the body seems really good. Not sure if that is just the yeast though.
