This one isn't rocket surgery or anything but something I came up with a couple weeks ago. I like to have a little runny yolk to dip my biscuit or toast in and I also like omelettes.
Simple. Make your omelette with all ingredients added and pour it in a pan. Crack 1 egg in the middle of it and leave it undisturbed. I cover my pan with my serving plate to speed up cooking and end up with a nice hot plate at the end.
Flip when the top is getting close to done or when you think it will stay together. Cook briefly to finish up the top then serve. You end up with an omelette with a runny yolk in the center. Yum.
