Having had several smokers in the past, my last one disintegrated a year ago. So when in need of smoke, I use my Weber kettle and find by controlling my coals, I can get a great smoke on just about anything. One of my fav's is salmon. So here's my rig. I followed Emeril's cured salmon recipe and used Maple chips with natural hardwood. As the temp gets too warm I simply lift the cover for a few minutes and then replace. For any other type of smoking, I lose the dryer hose

I've tried everything possible to load a video of the process from photobucket with zero luck.
