Any beer where you'd normally use Best or Weyermann pils malts.
I recall using Dingeman's pils malt several years ago; it was a good malt, but my LHBS charges a lot more for it than other pils malts, like Weyermann or Avangard, so that kept me from using it more often.

Yep, Dingemann's is good. I used to use it a lot. I prefer others but that's not to say it isn't a good malt.

So should I use it in something like a pilsner, helles or other gold lager where the Dingeman's would come through or should I bury it in a hoppy amber lager, dunkel or other dark lager or does it not matter? Sometimes when I make a dark lager I'll use 2-row or pale ale malt instead of pilsner malt because I assume the pilsner character will get lost in such a dark beer and I'll save the good pilsner malt for more pale styles where its character can come through.
I'd say it doesn't really matter. That said, you could try something like a pils/helles for the first batch with this malt, where the malt character can shine a bit more, so you can better decide if you like it or not.

this, use it like a featured pils malt, it's decent stuff

Great for Belgian styles, but then, you don't much care for those beers. Send it to me if you'd like.
