no idea why I'm calling it this.  but anyway....  10 gal batch.  please provide thoughts.  I've never made a german type pils.

 

malt:

17 lbs pilsen

1  lbs carapils

 

mash @ 151F (likely overnight)

 

calcium: 56

Mg: 3

sodium: 29

sulfate: 88

chloride: 60

utilizing some lactic acid to hit 5.3-5.4 mash pH

 

30 min boil.

 

hops:

? oz Hallertau (mix of GR and US) @ 30 mins (adjust to hit 27 IBU)

1 oz Hallertau (US) @ 5 mins

2.0 oz Hallertau (US) @ 0 mins

2.5 oz Hallertau (US) @ hop stand

 

ferment on wyeast 2124

This was the one I did and I really need to do that again before it gets to warm, want it ready for the spring/summer.

 

I think yours looks good.

hmmm - I might have some carahell.  does it go by any other name?  is it a crystal malt?

8.1-11.8L - Weyermann® - Carahell® is used in many German lagers looking for a little more body without much color. Mild caramel notes provide balance without overpowering the nuttier Munich and Vienna malts.

 

In reality I think Carapils is just fine and I have used carapils on the Helles I brew just about every batch.  I had the cara hell at the time so I used it.

sounds like it's pretty close to crystal 10.  maybe replace 0.25 lbs of my carapils with aromatic would do something similar overall though.

I have some carared as well.  maybe 0.25 lbs of that in place of carapils would add just a touch of complexity.  crazy idea?  not enough to matter?  going to make it not pils like?

should I up it to 0.5 lbs?  I could do 0.5 lbs carapils and 0.5 lbs carared.

 

I think I've only used carared in the waldo lake amber and that has so much stuff going on in it I don't have a great sense of what carared brings to the table.

I tend to agree.  I think if anything it will just make it a bit darker

I haven't run the numbers but it would probably be a tiny amount.  carared is 20L.

2.8-3.1 by my calculation @.25#.  Like I said ... a bit darker :)

if I were to not do a hop stand would you just add that 2.5 oz to the 0 min addition?
