Has anyone made anything like this? I'm thinking a golden strong ale but with american yeast and maybe a touch more on the hops side than one might normally expect. probably around 1.070ish with a low FG.

Got it. Yeah its a rare DIPA that is both amber and not too rich for me.
I'm planning on sugar in this batch for sure. maybe a mix of pils and 2-row for the base.

I have, on 1/5/2013, according to notes. Used honey to bulk up the OG. We had a thread on the subject, but it's probably lost in the archives. 10lbs pale 2-row, 1lb wheat, 3lbs sourwood honey (before the price went through the roof). 1 oz centennial/2 oz Palisade first wort hops; .5 ounces each of cascade, simcoe and amarillo for 5 minutes. .5 simcoe and .5 amarillo dry hopped. OG 1.070, finished at 1.004. WLP530 yeast. Bottled in 750ml snap cap bottles and aged 12 months. Respectable beverage.

sounds pretty good but I think I'll be using US-05 or similar. I'm not actually looking for any Belgian character.

WLP530 has minimal fruitiness or any of the typical Belgian yeast esters. I chose it for its alcohol tolerance.

No, 530. Abbey Ale, alcohol tolerance (claimed) to 15%, fairly clean and let the sourwood honey breathe.
