I'm planning on brewing 10 gallons of Porter soon around 1.050 - 1.060 that will be split between two buckets. I have one packet of Rogue Pacman in the back of the fridge that I'd like to use, which is obviously not enough yeast for the brew. I have two 2000ml flasks and two stir plates I can use for starters. If I make two starters around 1.030 and dump half the Pacman into each starter, would I end up with enough yeast (ballpark) in each for pitching or would I need to step them up to get a bigger population?

I don't think that will be enough yeast either. I think what I'd do is propagate the entire smack pack in one starter. Then split it in two and re-prop each one again, ending up with two flasks, each with a few hundred mL of yeast slurry.

Is Pacman year round now? How old is the package?

It's a few months old. I bought it on a whim, but since I only brew 10gal batches I haven't been able to use it.

I think I'll go this route. Since the package is a bit old by now I should confirm viability first anyhow.

I would buy another strain of yeast and do a side by side comparison

That's not a bad idea. I have a few varieties of dry and I think a few saved slurries in the fridge. I'll have to check if any of them make sense with the porter.

If it's a few months old, I'd probably do a couple of step starters before splitting.
