Figure we should pull this out of MAZ's thread before we get too off topic:

Am I MNT?As I recall it did have some nice vanilla and banana esters. I also liked the oaked one better. It had more going on than the other one....more complex. It's getting about time to brew another IS, I think.

Yeah that would be you.I'm due for one, I've got a couple gal of my last batch in a carboy somewhere but never could have too much...

I have a yeast cake of 1098 I could use.

I have a packet of 1098 slated for an IPA that is in the batters box so I'll have a cake of it as well...Want to dust off the recipes we were working on and tweak them or start off something new? Oaking?

Yeah, I do. I had a few changes that I wanted to make to my version. Let me pull my thoughts together and I'll throw out some ideas. One thing that I know mine needed was more bitterness and more hoppiness. Ok, two things...

I don't have my last revision handy, can post it up later. Based on the last round of judging I got on that one they're still wanting more dried fruit notes, haha.Anyways with my gear depending on gravity I can usually knock out about 8gal max which I'll probably shoot towards. It'll give me the ability to oak some again and leave some alone. I doubt I'll mess around with trying any vanilla bean version this time. It was good but I like the vanilla notes I pulled out of the oak better.Edit: I might have to order some hops...

Dried fruit is easy. Just throw a half pound of Special B/CaraAroma/C120 in the grist. I want more oak in mine too. I don't know if that means use more oak, leave it longer or both.

Already had a 1/2-3/4lb in there if I recall correctly, which is why I thought the comment sort of odd...We could do bi-weekly or monthly additions of cubes, something like 1/2oz at a time or such. So it doesn't get a heavy hit of the initial oak and would allow the first cubes to mellow and develop more complexity. Theoretically there would be multiple stages of the oak flavor when its all said and done.

Sounds like you already have a recipe you're tweaking, but I throw my most recent one on for grins. I brewed this one a little over a week ago (3/28) and actually racked it to the secondary last weekend. Two packets of US-05 took it from 1.098 to 1.020 in a week! I managed to keep the temp in the low 60s too, so no unexpected esters. Anyway, I added 3 oz of used oak cubes that had been soaking in bourbon for close to a year (whenever I'm done with oak cubes from one batch, they just go in tupperware covered in bourbon).I'll probably sample ever couple weeks... I'll keep you posted on flavor developments.

Got out my notes, apparently I did forget the special B so the fruit note comments were warranted...7.5gal batch here:11lb 2 row5lb wheat (I had a lot on hand other wise it swap 4 to 4.5lb of this over to 2row)2lb munich2lb vienna1/2lb chocolate1/2lb caramunich1/4lb black patent3/4lb roast barley(needed but forgot 1/2lb special :covreyes:.5oz simcoe & .5oz centennial @ FWH3oz Blend of simcoe/amarillo/centennial @60min1oz Blend of simcoe/amarillo/centennial @10min1/2oz amarilla @ 5minO.G. 1.080

Here is my brewing session from last time. I was planning to keep the grain bill about the same. I'm trying to use what I have on hand and I don't have any black patent. I wonder if I should run to the HBS today and get some or do you think I'll get enough roastiness from chocolate wheat and dehusked Carafa III?On the hops, again I'm trying to use what I have so for bittering I'll be using some combo of Horizon and Palisade for bittering and Amarillo on the back end. I may FWH it with an oz. of Amarillo and then add another oz. at flameout.

I think you could get away with the black patent, but I'd bump up the choc wheat to a lb and the carafa III to 3/4 lb or even 1 lb.Just realize I'm posting this in the afternoon... what did you end up doing?

Here's the recipe as it exists at the moment. LinkyI want to retain the deep roasted aroma and flavor of the original version but I want to add more bitterness and hoppiness. I also want more oak so I'm going to increase the oaking time and may add multiple oak additions depending on how it ages.

My only question is why you dropped the roasted barley. I know many excellent stouts are made without it, but to my palate, roasted barley is one of the key ingredients that gives the brew that "deep roasted aroma" (and flavor). Even a 1/4 lb in your recipe would make a nice contribution. But with or without it, your recipe looks great and should make an excellent RIS.BTW - I just bought 5 lbs of CaraWheat (which I've never used before). Sounds like a great addition to a stout or porter.

I just don't happen to have any. I may go get some. I just remembered that I can't brew tomorrow anyway and so I"m going to push it back a week. You don't think that Carafa III would be just as good?

I really didn't think about that. I've only used Carafa in small-ish amounts as a sub for Black Patent because it is supposed to be smoother. Some quick Googling shows that it is a good sub for Roasted Barley. 1 lb of Carafa III ought to do it. Thanks for questioning my question - I learned something!

Nah, I didn't. I had a small problem with my sparge manifold and I didn't have any solder in the house on Sunday to fix it. It's fixed now and I'm planning to do it Saturday.
