Greek Pizza. I love this stuff.

Tweaked a recipe that I learned from my sister.

No quantities for ingredients. Add what you like.

 

Pizza crust (duh) Ready made or go all out and make your own.

Roasted garlic.

Marinated artichoke hearts

diced onion

sliced Kalamata olives

sliced mushrooms

Feta cheese. Either crumbled or the solid block, diced

Roma tomatoes sliced paper thin.

 

IMHO, the solid block of Feta, diced, works better. It seems to melt better.

 

I start with a ready-made pizza crust. Local grocery store has one with some herbs in it. It's darned good. No quantities for ingredients. Add what you like.

 

Mix the roasted garlic with a little olive oil and spread it on the crust. I love that stuff. It spreads like warm butter. Yum

 

Add the rest of the ingredients in the order they are listed. The tomatoes need to go on top so they will get somewhat dry. It ain't a hamburger. No one wants to bit into a juicy tomato in a pizza.

 

It may seem weird that there is no tomato sauce, but I love this pizza. Don't go crazy and make a solid layer of artichoke hearts or olives. The water content will make a gooey crust. Use less if it's a really thin crust. Same issue.
