I was asked this question and don't have a clue, Non Alcohol beers, do they not ferment and just carbonate, or ferment and boil off the alcohol and carbonate?

They definitely ferment. Taste some malta goya if you want to see what carbonated wort tastes like. I believe that the big brewers manipulate the vacuum so that the alcohol boils off at a much lower temp than normal.

Yeah, I'm 99% sure they are vacuum distilled. Great deal for the breweries. They can sell the NA stuff for pretty much the same price then sell off the pure ethanol as fuel.
