Carrabba's Sausage and Lentil Soup

Carrabba's Sausage and Lentil Soup

 

1 cup white onion diced

1/2 cup carrot diced

1/2 cup celery diced
3 cloves garlic minced 1/2 teaspoons salt

2 tablespoons butter or olive oil
1 pound Italian sausage
48 ounces low sodium chicken broth 1 1/2 teaspoons Italian seasoning
1 14.5 ounce can diced tomatoes
1 cup brown lentils

 

In a large pot add onions, carrots, garlic, and celery and either butter or vegetable oil. Saute until the onions are transparent. Add sausage, and cook until browned. Drain the excess oil if necessary. Add chicken broth, Italian seasoning, diced tomatoes and brown lentils. Cover with lid. And simmer for about 1 hour. You may want to add some additional water if too much water cooks out during the cooking process.

 

I used to make this with mild Italian sausage because the hot was too spicy for my wife. Carrabba's uses hot Italian sausage in theirs. It's good either way... but I like spicy.

Concur. I’d probably add some parsley, but I love parsley. Maybe a little white wine.

Concur. I’d probably add some parsley, but I love parsley. Maybe a little white wine.

Commonly part of Italian seasoning so almost no question adding some/more would be good.

I have had this soup and also made it from a recipe that is the same to this or very close and it is always good.

Are you using the ground sausage from inside the casing?  Or is it just ground sausage in a package without the casing.  I guess I have seen both.
