My latest version guys. This is Sooooo close it isn't funny.The secret is the yeast: WYeast 3864 Canadian / Belgian. I've been meaning to get some of that yeast. I am a big fan of uni's triple - Fin du Monde I think? At any rate, that looks like a yummy recipe, thanks for posting it.

Wow - that's great Stout Fan. Maudite is one of my favorite brews, but I'd never considered cloning it. Another one for the recipe file.

Great timing! I asked you for the recipe a couple of years ago but you hadn't submitted it to competitions yet and I kept meaning to ask if you'd share it. I was just thinking about that 2 days ago.I think this'll make my list for next month.FWIW, I think that they only use regular white sugar.

My local Binny's have most of the Unibroue beers on sale for $5.49 now, so I bought a bottle of Maudite on the way home to get reacquainted with this fine beer!
